England has an Indian restaurant on every corner, like Dunkin Doughnuts in the States! Indian restaurant were rare in The States and when I first lived in Nantucket, it was really difficult to get ingredients but eventually the Stop n Shop supermarket started stocking Pataks, so I was able to at least purchase marinade! On trips to visit family in California, I was able to go to an Indian grocery and stock up on spices and ingredients. But I did miss a take out!
However, there was an Indian restaurant on Main Street in Hyannis, on Cape Cod, that I discovered and I persuaded them to fly Indian food out to me on a plane, as I could pay over the phone and as they were located near the airport, it wouldn’t be too different to delivering a takeout to any other address. They agreed to do this, so I would go out to ACK airport and pick up my takeout from a Cessna twin engine air plane. People waiting at the airline desk saw that I was getting Indian food delivered, would ask about it and then take the menu that was always attached to the side of the bag, so business grew for the Indian!!
A few years later, I picked up a copy of British Homes & Gardens and there happened to be an article about Nantucket in it! The opening to the article was about how the people had to have their Indian take out delivered by plane!!! I think I can take credit for starting that! More recently, Meghan Trainor was talking about getting her takeouts from the airport in an interview.
I have been to Bombay -now Mumbai- and of course I love to eat more authentic food, which can only really be achieved by cooking at home. Many Indian dishes work extremely well in the crock pot, as the slow cooking with the spices develop beautifully flavored food that falls apart when served.
My favorite dish is lamb rogan josh and when I found this recipe, it fast became a staple! It blew my local restaurants one out of the water!!!!
WINE We always drink Negro Amaro with this which is a medium to full tannic wine with spice flavors of cinnamon, clove and allspice, so works perfectly!!!!!
I recommend making your own naan bread as it just tastes so much better than store bought!!!! Scroll down for the recipe as you can make it after the rogan josh is in the crock pot!!!!!
Make this and I promise you Friday night curry night will never be the same!!!!
1.5 kg (3 ¼ lbs) boned lamb shoulder
2 large brown onions (400g) sliced thinly
5cm (2inch) piece of ginger (25g) grated
3 cloves garlic crushed
½ cup (125ml) rogan josh paste
2 tbsp tomato paste
400g (14 1/2oz) canned diced tomatoes
½ cup (125ml) beef stock
1 cinnamon stick
4 cardamom pods, bruised
2 dried bay leaves
½ cup loosely packed cilantro leaves
(Rice & naan to serve)
- Brown lamb and place in crock pot
- Combine onion, ginger, garlic,pastes, undrained tomatoes, stock, cinnamon cardamom and bay leaves in crock pot. Cook on low 8 hours
- Sprinkle with cilantro leaves to serve.
- 1 pack of yeast or 2 1/4 tsp
- 1 cup warm water
- 1/4 cup white sugar
- 3 tablespoons milk
- 1 egg, beaten
- 2 teaspoons salt
- 4 1/2 cups bread flour
- 2 teaspoons minced garlic (optional)
- Throw all the ingredients into a bread maker and put on the dough setting.
- Sprinkle with water and toast under the broiler for a minute or two each side!
