Store Cupboard 4 Ingredient Butter Bean & Chorizo Stew

Well, we survived a move of home and are now located in a beautiful red brick cottage, thankfully, as we just completed our move before Covid-19 lockdown occurred!! We feel so blessed and grateful, that we got here with the help that we needed to make it happen!!

During this time, we have been keeping it simple, as home moving, constant changes with work, packing and unpacking has taken most of our energy. As we had run down our food supply, we were hit by the wave of panic buying, trying to buy food after work and finding the stores empty!

However, living in the UK, we kind of eat off the grid of what most British people eat and can work with ingredients that were left behind in the stores!!! With the help of a local convenience store, we have been able to pull some good food together. Thankfully, as I am writing this, the stores are now starting to have more food available, making it less stressful and we can plan for healthier and exciting food!

But this recipe is great if you are still trying to make the most of your pantry and are trying to keep food simple as far as budget and ingredients are concerned, not knowing what the financial food situation will be. It was also fast, so enabled us to eat well when we didn’t have the energy to cook. Also a great one if you are trying to combine working from home whiel home schooling younger family members, or you simply want to spend more time on that Netflix binge watch!!!

WINE NOTE: A Spanish Garnacha is rather nice with this!! It is good with both the paprika flavour from the chorizo and the basil!!

This serves 4 people, takes 5 minutes to prepare and 15 minutes to cook!!! Its one that will help you ease back into working life when that day finally arrives!!!

200g/ 7oz cooking chorizo sliced
2 X 400g/ 14oz cans chopped tomatoes
2 X 400g/14oz cans drained and rinsed butter beans
1 jar pesto

Place the chorizo in a large skillet and fry over low heat for 5 minutes.
Pour the tomatoes and butter beans in and bring to a boil, then simmer for 10 minutes.

Gently blend the pesto through & season to taste.

Serve in bowls.
