Most Americans are familiar with this very tasty and fun recipe! It’s a great way to use peppers, if you have had to buy a multi pack from the supermarket. It’s fast but also a very comforting dish and you can go full fat unhealthy or adapt it to make it healthier. Much will depend on what country you are in, but if in the States you can use Italian style turkey sausages and high protein noodles.
If you are in the UK you may have to make slightly more adaptations, using your own spice blend, which I will provide the recipe for below the main recipe. I usually buy chicken chipolatas in a pack of 10 and blend 1 1/2tsp of the spices into the sausage and then form into small balls ready to cook. I then serve it with soy spaghetti. The Italian sausages referred to in the recipe, are actually an American product which is pork sausages with a mostly fennel flavour that can be sweet or hot.
WINE NOTE: It doesn’t matter if you decide on pork, turkey or chicken sausage, this is very much red wine fodder!! We paired a Sangiovese with it, for the ultimate comfort food experience!
Skillet Sausages & Peppers (serves 6)
6 Italian style sausages
1 Medium onion chopped (if in UK use 2 onions as they are so much smaller)
2 Cups (aproximately 3) any color bell peppers (you can use frozen peppers)
1 16oz or 500g jar of pasta sauce with mushrooms
6 cups of cooked pasta (or 6 of your regular servings)
Spray a large skillet/ frying pan with cooking oil spray
Brown the sauasages on all sides, then add the onions and peppers, cooking for 5 minutes, stirring.
Stir in the spagetti sauce and bring to a boil. Lower the temperature, cover and simmer for 10 minutes.
Seve over pasta
Italian Sausage Spice Blend
2 tsp parsely
2 tsp Italian seasoning
1 tbs garlic powder
1 tsp dried onions
1/2 tsp fennel
1 1/2 tsp black peppercorns
1/2 tsp paprika
1 tsp red pepper flakes
2 tsp salt
Place all the above ingredients into a spice belnder and blitz until a powder.
Take the meat out of 10 chicken chipolatas or turkey sausages, or pork sausage meat and blend one and a half teaspoons of spice through the meat. Roll into balls and precede with the recipe.
