When I moved to England, I made the mistake of going to a British Kentucky Fried Chicken. I got past the smell of rancid oil and placed my order. It took several attempts to order slaw and eventually realised that if you don’t say ‘coleslaw’, they just don’t understand!!!
Any way, I took my box of chicken back to my workplace and attempted to eat it, with oil pouring off it and yes it tasted pretty awful. So, the only way to settle those southern fried chicken cravings was to make my own.
Luckily, my mother had given me a cookbook from New Orelans that had a pretty decent fried chicken recipe in it, that we have made ever since! It is baked in the oven, but last year we got into air frying and started cooking it that way! I am putting both methods here, but if you haven’t converted to air frying yet, I do recommend it! Mr Winewithfood even likes it and prefers the clean up after, compared to a deep fat fryer!!!
WINE NOTE: I always lean towards Californian oaked Chardonnay for this! It is just so good with chicken, slaw and biscuits!! You could go red with the gravy, f so, I would go with a lighter red such as Garnacha, rather than a heavy oaked one.
Pam Spray or Fry Light Spray
6 chicken drumsticks
6 skinless chicken breasts
3 1/2 cups / 875ml ice water
1 cup / 250ml fat free yoghurt
1 cup / 125g dried Italian breadcrumbs
1 cup /140g all-purpose flour (plain flour)

1/2tsp garlic powder
1/2 tsp Creole seasoning – again you can order from me, price on enquiry (reasonable pricing)
1/2 tsp black pepper freshly ground
dash of cayenne pepper
1/2 tsp dried thyme
1/2 tsp dried basil
1/2 tsp dried oregano
Preheat oven to 400F / 200C / 180 fan or heat the air fryer 350F / 180C
Coat a baking sheet with 3 oil sprays if oven cooking.
Put the chicken in a large bowl of with the ice water
Place yoghurt in a medium bowl.
Put all of the remaining ingredients in a large Ziploc bag, seal and skake it well
Dip the chicken pieces in yoghurt and then into the bag and shake to coat. Repeat.
If oven baking; Place the breaded chicken on the baking sheet and spray lightly with oil. Place in the lower half of the oven and bake for 1 hour, turning every 20 minutes.
If air frying, spray lightly and cook for 14 minutes, then turn and cook for a further 8 minutes.
let rest for 10 minutes and serve with slaw and biscuits and your choice of gravy- Southern or cream.
