Light and Fast! Asparagus Spears with Lemon and Ginger Sauce -Ready in 10!

Easy but phenomenal flavors!

Do you want an elegant appetizer that is ready in less than 10 minutes, naturally fat free and doesn’t spoil you healthy eating? Well this one’s for you! Oh and did I tell you the flavor is phenomenal and  will have you buying asparagus in bulk during the season! It is so fast to make, especially if you make the sauce on an induction plate! While the sauce is reducing, I throw the asparagus in the steamer and in less than 10 minutes it’s ready!!  The sauce can be frozen, so batch cook it and keep to pour over other vegetables, or just to keep going through the asparagus season.

WINE PAIRING: Gruner Veltliner is a good pairing for the difficult to pair asparagus. It also pairs well with the gingery sauce, as this spicy aromatic wine is one of the classic pairings for slightly warm food

1/2 cup /125ml Water

1 Chicken stock cube (or you could just use 1/2 cup chicken stock instead of the water and cube)
2 Tbsp lemon juice
1 tsp grated ginger
A good pinch of Himalayan or sea salt
Fresh ground pepper
8 Asparagus

Wash and trim the asparagus spears

Start the steamer

Put the water, stock cube, lemon juice and ginger in a pan and bring to a boil. Reduce the heat and simmer rapidly until reduced to 1/4 cup, then add the salt and pepper to taste..

Meanwhile, steam the asparagus for 4 minutes then plunge into cold water to stop the cooking.

Pour the sauce into a dish, put on a plate with the asparagus and serve.
