Lighter Chicken Fried Steak With Gravy in the Air Fryer or Skillet

Indulgent chicken fried steak made lighter with air fryer onion rings and sweet potato air fryer fries

Diner style food is the most comforting food you can find in America. This is where you will find most traditional dishes, served to a great standard. Tasty and satisfying! Always with friendly service!
One of my favorite diner dishes is chicken fried steak! I should note to you at this point, if you are not familiar with American food, this does not involve any chicken, it refers to the coating on the steak, which is similar to the coating on Southern fried chicken!
It’s usually an indulgence, but I have lightened it up so that I can enjoy it while taking care of my health and weight! I still have it as a treat though, which I allow myself once a week. However, I serve it alongside lighter sides, such as mashed celeriac, or air-fried sweet potato fries. If it’s been a good week, I may also have air fryer breaded onion rings, but if not, then green beans. Either way, it is hugely satiating! I have given the methods for both skillet and air-fryer methods.

WINE NOTE: Steak definitely pairs well with Malbec which has enough of a hint of spice to pair with the subtle spices in the coating and gravy.

INGREDIENTS

12 oz / 625g uncooked lean beef round / steak medallions

¼ cup all-purpose flour / plain flour
½  tsp, salt
Pinch of  black pepper
½ cup fat free skim milk
1 large egg whisked
1 cup coarse dried plain breadcrumbs
½  tsp cayenne pepper

2 slice(s) uncooked reduced-fat bacon / bacon medallions
1 spray(s) cooking spray
½ cup chopped uncooked onion
1 tbsp all-purpose flour / plain flour
¼ tsp salt
Pinch of black pepper
1 ½ cup / 375ml fat-free skimmed milk
⅛ tsp hot pepper sauce

  • Place steak between 2 sheets of waxed paper and using a meat mallet or a heavy rolling pin, pound the steak to 1/2-inch thickness.
    Slice the steak into 4 equal pieces.
  • Combine flour, 1/2 teaspoon of salt and 1/8 teaspoon of pepper on a plate. Combine 1/4 cup of milk and egg white in a shallow bowl.
    Place bread crumbs on another plate and stir in the ½ tsp cayenne pepper.
  • Dip a piece of steak in flour mixture; turn to coat both sides.
    Next, dip steak in milk mixture; turn to coat both sides.
    Lastly, dip steak in breadcrumbs; turn to coat both sides and set aside.
    Repeat with remaining pieces of steak.

skillet method

In a large nonstick skillet, over medium heat, brown bacon, flipping once, about 5 minutes; remove from skillet and set aside. Add steaks to the same skillet and place over medium-high heat. Cook about 3 to 4 minutes per side for medium, or longer to the desired degree of doneness. Remove steaks and set aside.

Off heat, coat skillet with cooking spray and set over medium heat. When hot, add onion; cook until tender, stirring occasionally, about 4 minutes. Add 1 tbsp of flour; cook, stirring constantly, for 1 minute. Pour in the 1 1/2 cups of milk, scraping up any browned bits with a wooden spoon. Reduce heat to medium-low; add 1/4 teaspoon of salt, a pinch of pepper, and hot sauce. Crumble bacon; stir into skillet. Increase heat to medium and cook until gravy is thickened, stirring constantly about 1 to 3 minutes. Spoon gravy over steaks and serve immediately. 

air fryer method

Heat air fryer to 400F / 200C

Fry the bacon in the air fryer for 10 minutes and place it on a reusable cloth or paper towel.

Coat the steak thoroughly with cooking spray and place it in the basket. (You will probably have to do this one steak at a time). Cook for 6-8 minutes, turning halfway through.

Coat a non-stick skillet with cooking spray and set over medium heat. When hot, add the onion and cook until tender, stirring occasionally about 4 minutes. Add 1 tbsp of flour; cook, stirring constantly, for 1 minute. Pour in the 1 1/2 cups of milk, scraping up any browned bits with a wooden spoon. Reduce heat to medium-low; add 1/4 teaspoon of salt, a pinch of pepper, and hot sauce. Crumble bacon; stir into skillet. Increase heat to medium and cook until gravy is thickened, stirring constantly about 1 to 3 minutes. Spoon gravy over steaks and serve immediately.
