North African Flavored Pork Chops With Apricot Couscous

Spot the deliberate mistake!! North Africa is predominantly Muslim, so will not be eating pork chops. However, the flavors and spice blends of the region work well with pork chops, for an easy midweek supper. You could replace the pork with chunky white fish & the recipe would work just as well!

WINE PAIRING: An easy wine with this is a Cotes De Provence Rose which will be crisp with the spices and pleasant with the pork

1lb/ 450g Pork loin steak divided into 4 chops
1/2 tsp Ground cinnamon
2 tsp Ground cumin
2 tsp Ground coriander
Cooking spray
2 cups / 300g couscous
2 Chicken stock cubes or stockpots
1 Small can of apricots
1 Tbsp fresh chopped cilantro / coriander

Combine the spices in a small dish and rub over the pork chops.
Leave to marinate for around 20 minutes.
Spray a skillet and place on a medium high heat. Place the pork in and cook turning once, until light pink, around 8 minutes.

While the pork is cooking, prepare the couscous, by making 2 cups / 500ml stock and putting the 2 cups of couscous into the stock. Stir through the cilantro and apricots and leave covered for 5 minutes.

Serve the chops over the couscous.
